Japchae, a traditional Korean dish, made with sweet potato noodles, beef, and vegetables stir-fried in a sesame oil-based sauce is a delicious and colorful meal. Japchae (잡채; 雜菜) is a sweet and savory dish of stir-fried glass noodles and vegetables that is popular in Korean cuisine. Japchae is typically prepared with dangmyeon (당면, 唐麵), a type of cellophane noodles made from sweet potato starch; the noodles are topped with assorted vegetables, meat, and mushrooms, and seasoned with soy sauce and sesame oil.

Japchae is one of the most popular of recent trending foods in the world. It is appreciated by millions daily. It is easy, it’s fast, it tastes yummy. They are fine and they look wonderful. Japchae is something that I have loved my whole life.

To get started with this recipe, we have to first prepare a few ingredients. You can cook japchae using 12 ingredients and 5 steps. Here is how you cook that.

The ingredients needed to make Japchae:
  1. Take 90 g baby spinach leaves
  2. Prepare 60 ml (1/4 cup) soy sauce
  3. Prepare 1 tbsp caster sugar
  4. Take 60 ml (1/4 cup) sesame oil, plus extra, to drizzle
  5. Prepare 1 garlic clove, crushed
  6. Get 1 egg, lightly beaten
  7. Get 240 g sweet potato vermicelli (dangmyeon) (see Note) or mung bean vermicelli
  8. Take 80 g (about 4) fresh shiitake mushrooms, thinly sliced
  9. Get 1 white onion, thinly sliced
  10. Take 1 zucchini, thinly sliced into matchsticks
  11. Prepare 1/2 cup garlic chives (see Note), cut into 5 cm lengths
  12. Make ready sesame seeds and kimchi (optional), to serve

  2. Combine soy sauce, sugar, 1 tablespoon of sesame oil and garlic in a bowl and set aside. Heat 2 teaspoons of sesame oil in a wok over high heat. Season egg with salt and pepper and pour into wok, swirling to make a thin layer. Cook for 30 seconds or until set. Cool slightly, roll up and then slice.
  3. Cook noodles in boiling salted water for 5 minutes or until tender. Drain well, drizzle with a little sesame oil and toss to combine.
  4. Meanwhile, heat remaining 1½ tablespoons of sesame oil in a large wok or frying pan until hot. Add mushroom and onion, and cook for 2 minutes or until tender. Add zucchini and cook for 1 minute or until just tender. Add noodles, soy sauce mixture, spinach and garlic chives, toss to combine and cook until warmed through. Serve scattered with sesame seeds and topped with egg and kimchi, if desired.
  5. NOTES - - Sweet potato vermicelli (dangmyeon) is available from Asian food shops. - Garlic chives are available from Asian grocers, substitute regular chives.
