  9. Get 400 ml Coconut Milk
  10. Get 400 g Finely Chopped Tomatos
  11. Make ready Chopped Coriander (Optional)
  12. Make ready Roasted Peanuts (Optional)

Method Put the chicken and half the curry paste, mixed with a splash of water, in a large bowl. Heat the oil in the pan and add the onions and chilli, then cook until softened. Heat a wok up over a medium heat. Once melted add the onion, garlic, and ginger.

Instructions to make Satay Chicken Curry:
  1. Lightly spray a wok with Frylight. Add the diced chicken thighs and fry until slightly golden. Add the soy sauce and Chinese 5 spice and stir to coat. Remove from the pan and set aside.
  2. Add some more frylight to the wok. Add the garlic, chilli and ginger and fry for 1 minute. Add the garam masala and fry for another minute.
  3. Stir in the peanut butter, coconut milk and tomatoes and bring to a simmer.
  4. Return the chicken to the wok and cook for 30 minutes until the sauce has thickened and the chicken cooked through.
  5. Sprinkle chopped coriander and chopped roasted peanuts on top of the curry. Serve with a choice of rice and naan bread. Enjoy!

Fry until fragrant then add in the chicken pieces. For the chicken marinade, mix together the coconut milk, peanut butter, brown sugar, curry paste, sauces and salt in a large, shallow bowl until well combined and creamy. Add in the chicken, turning to coat completely with the marinade. Place the chicken breasts in the marinade and refrigerate. So I like to marinade the chicken to make it extra tasty.
