This is a good base recipe and I may try a little chicken or sausage next time but I will keep it and play around with the ingredients for fun. Sopa Seca (literal translation is dry soup in Spanish) is a Mexican noodle dish.

Sopa Seca is made with Birds Nest Vermicelli - a thin, Angel Hair type pasta I get it - dry and soup don't seem to belong together in a sentence, much less a recipe. This soup is born as noodle soup (or fideo soup in Spanish) and starts out brothy, but as the noodles soak up the liquid it becomes more like the pasta version of spanish. The lack of chicken stock wasn't the main dissapointment, rather the use of parsley instead of cilantro.

Instructions to make Amazonian dry chicken soup (sopa seca):
  1. Add 2 tbsp of oil to the wok, turn on the hob to a medium-high heat.
  2. Brown the chicken pieces on both sides, about five minutes, and season with salt and pepper before moving the pieces into a bowl using a slotted spoon.
  3. Lower the heat before adding the onion and garlic, frying for a few minutes until the onion has softened and appears translucent.
  4. Turn the heat up to medium, stir in the peppers, chillis and cook for two minutes.
  5. Add the tomatoes, curry paste and browned chicken pieces. Snap the spaghetti in half with your hands before adding to the wok, followed by the stock.
  6. Bring to the boil and stir things around to distribute the spaghetti and other ingredients.
  7. Simmer for 20-25 minutes, stirring occasionally. As the dish simmers, the pasta will absorb the stock and begin to dry out.
  8. Season to taste before garnishing with coriander and chilli flakes, if using, and serve immediately.

This just ruined the soup's flavor into something unrecognizable to me and it no longer felt like I was having "Sopa de Tortilla". It wasn't bad, it just no longer tasted like Tortilla Soup. Pour in the chicken stock and let the liquid come to a simmer. Sopa Seca de Fideo, Mexican Noodles. This soup can be made adding diced chicken or ground beef, plus vegetables making it a whole meal by itself.
