Take 6 tbsp self raising flour
Make ready 6 tbsp Greek yoghurt

Take Half cucumber deseeded and chopped
Get 3 tomatoes deseeded and chopped finely
Make ready 1/2 red onion chopped finely
Get Juice of 1/2 lemon or juice from whole lime

Transfer the sauce to a blender and puree. Return sauce to the pan, stir in the cream, season with salt and pepper and bring to a boil. Divide the rice among bowls and top with the chicken and sauce. Slice the chicken into bite-sized chunks.

Combine all marinade ingredients with the chicken, mix well and refrigerate for at least an hour but ideally overnight. Fry your chicken on a hot pan, skewer and grill or bake in oven at 230 degrees for 15-20 minutes.

For the kachumber, mix the cucumber, red onion and tomato in a bowl with lemon juice and salt. Allow to mix for 5-10 minutes then garnish with fresh coriander.
Combine the cubed chicken with the yogurt, lemon juice, garlic, ginger, salt, cumin, garam masala, and paprika and stir until well-coated. Line a high-sided baking pan or roasting tray with parchment paper. Heat ghee in a large heavy pot over medium heat. To marinate the chicken, add the ginger-garlic paste, yoghurt, ground spices and salt to a large bowl and mix well. This low and slow re-heat allows the sauce to get its act together and not separate, plus it keeps the chicken from getting rubbery.
