Now drain the water and and set the potatoes aside to dry them up.Then in a wok heat oil and deep fry the potatoes (make sure you maintain a distance from the wok as the oil flutters when you add potatoes due to a little moisture left in them during boiling process)Be careful ! Don't burn yourself. It's advised that you put the potatoes one by one.
In the meanwhile, we can make the spice mix, with coriander powder, dried mango powder,red chilli powder,garam masala powder,black pepper powder, powdered sugar and salt.
After 10 minutes, remove the potatoes, cool them and press them slightly between the palms to make roundels, don't flatten them, just a slight press.in case you are in a hurry, you can keep the potatoes on a flat platter, keep a flat laddle on the top of the half fried potato and press slightly,this will save your time and protect your hands from getting burnt.
Re-fry the pressed potato roundels till they turn reddish brown.
Remove the potatoes from the wok and drain the excess oil on a tissue paper.But don't drain it all. We need the some oil on the potatoes so the spice mix can hold on to the potatoes
Now in a mixing bowl, put in the fried potatoes roundels and the spice mix
Toss it well.Make sure every piece gets a good amount of spice mix on it. (It's the real deal)
