The ingredients needed to make Spinach, Mushroom, Babycorn and capsicum:
  1. Get 200 grams button mushrooms
  2. Take 1 Capsicum / green bell pepper
  3. Take 1 bunch Fresh Spinach finely cut
  4. Make ready 150 grams Baby corn ( approx 4 )
  5. Take 1 bunch curry leaves
  6. Get 1/2 tsp sesame seeds
  7. Get 1 pinch asaefotida/ hing
  8. Take 1/2 tsp mustard seeds
  9. Get 1/2 tsp turmeric powder
  10. Take 1 tsp Tandoori masala/ or half tsp red chilli pwd
  11. Get 1 salt as per taste
  12. Make ready 1 tbsp vegetable oil / olive oil
  13. Prepare 2 tbsp tomato puree

Add the baby corn and mix. Keep it covered on low flame till the water gets absorbed. Add the tomatoes, lemon rind and garlic, and season with salt, pepper and nutmeg. Finally, add the spinach and stir through.

Instructions to make Spinach, Mushroom, Babycorn and capsicum:
  1. In a pan, add oil and when it heats add mustard seeds, hing. After the mustard seeds splutter add sesame seeds, add a few curry leaves, then add mushrooms cut in halves. The flame should be on medium. To this add diced white onions, finely cut garlic.
  2. Add babycorn cut in strips. Toss and saute for 3 to 4 mins. Add salt and finely cut spinach, then add tomato puree as well as tandoori masala. Add green peppers, Cook on high flame for 2 to 3 mins

Cook until the spinach is just wilted (turned wet and reduced in size). Stir in diced capsicum and sliced mushrooms. Baby corn is produced from regular corn plants which are harvested early while the ears are very immature, resulting in small ears or baby corn. Depending on variety, kernels can be yellow, white, blue or even pink. Baby corn adds a special, gourmet touch to many dishes and salads.
