The ingredients needed to make Gushtaba:
  1. Prepare For kofta
  2. Take 300 gm minced chicken
  3. Get 1 tsp fennel seeds

  15. Prepare 2 tbsp mustard oil or desi ghee

  18. Prepare 1/2 tsp saunf powder
  19. Make ready 1/4 tsp sonth powder
  20. Prepare 1/4 tsp garam masala pow
  21. Prepare 1 tsp dried pudina powder

Gushtaba Recipe is an integral part of Kashmiri Wazwan. Wazwan is a multi-course meal in Kashmir which includes many mutton recipes like Kabab, Rogan Josh, Doudha Ras, Aab Gosh, Daniwal Korma, Waza Palak, Rista, Gushtaba and many more. Though it also includes some vegetarian dishes like Dum Aelva, Dum Aloo, etc. Gushtaba is a curry made with pound mutton pieces that is mixed along with cardamom pods and ginger and cooked in a curd based curry.

Instructions to make Gushtaba:
  1. Grind keema in the mixer to a fine paste without adding water.Mix all ing under koftas well together.Shape into large size koftas or as desired.
  2. Heat 1 1/2 cup water in a pan along with salt,tejpatta,dalchini and laung.When it boils add the koftas.Cook fr about 20 min or till tender/cooked.
  3. Heat oil in a kadai.Add ghee & sliced onion.Fry till golden brown.Remove & grind to a fine paste with a little water.keep paste aside.
  4. In the same oil add well beaten curd,saunf,sonth,garam masala,mint & illaichi pow.Keep on low heat.Stir till it boils.
  5. Add onion paste,Mix well for a min.Add cooked koftas along with any water that is remaining.Cover and cook for 15-20 min.Serve garnished with fresh mint leaves.
