The Kerala Sambhar is a rich and flavourful version, which is made of toovar dal and mixed vegetables like brinjal, ladies finger and red pumpkin, laced with tamarind and flavoured with a spicy masala of coconut, onion, coriander seeds and other spices like pepper, fenugreek and cumin. Kerala Sambar Easy is a nutritious side dish of mixed vegetables as per your choice. Sambar is an authentic, traditional dish that goes well with idli, dosa and even with hot rice for your noon day meal. This dal based tasty vegetable curry can be included in your daily menu.

Instructions to make Sambhar Kerala style:
  1. Wash and Soak arhar Daal for 15 minutes.
  2. Now put arhar Daal in pressure cooker with salt, turmeric powder and 2 bowls of water. Pressure cook till three whistles. Switch off the flame. Let pressure releases automatically.
  3. In the meanwhile chop and wash pumpkin and cut it in small pieces. Boil it in a pan in one bowl of water. Keep aside.
  4. Heat oil in a karahi and put mustard seeds and when mustard seeds splutter add curry leaves, asafetida and dry whole red chilli. Sauté for 30 seconds. Add whole baby onion, tomato, carrot, tamarind Ball, salt and turmeric powder. Cook for 5 minutes.
  5. Now add pumpkin with water and cooked arhar Daal in it and stir. Cook it for 2-3 minutes. Add sambhar masala.
  6. Serve hot with idli, rice or dosa.

Usually Sambar is prepared when left over vegetables are there. Slice the onion, carrot, drumstick, tomato, plantain into sambar sized pieces (small cubes or thumb length according to the vegetable being used). Heat the coconut oil in a heavy-based wok. Add the mustard seeds and allow to pop. Next, add the cumin seeds and when fragrant, add the curry leaves and dried red chillies.
